I would love to see a historical analysis of how these Canada and America ended up with these weird laws blocking housing as well as an analysis of whether or not this is true in other parts of the Anglosphere (ex. Australia, and New Zealand). I imagine it's true in Britain as well.

There was a visualization by John Burn-Murdoch going around a couple months ago, comparing housing per capita in Anglophone countries to continental Europe. Alon Levy suggests that the correlation is spurious, with some interesting historical comments, although he does say that there's greater acceptance of apartment living in Europe compared to the UK. https://pedestrianobservations.com/2023/03/21/no-the-anglosphere-isnt-especially-nimby/

One other difference: Conrad Speckert points out that after World War II, continental Europe had to do a lot of rebuilding, so they rethought and rationalized their building codes. The Anglophone countries were never forced to do that.
